
I survived my No-Spend weekend of the month! It was tough, but I got through it by finally completing some things off my growing chore’s list, spending time with family, and cooking up one of my favorite go-to meals: a kale bowl.
My favorite thing about this recipe is that it’s delicious in its simplicity. Just roast some veggies, chickpeas, steam some kale, then BOOM: quick, healthy meal that is perfect for meatless meal prepping.
This kale bowl is also super customizable. Add more or different roasted veggies to the mix. Play around with seasonings. The bowl is your oyster.
My Kale Bowl recipe was adapted from Angela Simpson’s version on her blog, Eat Spin Run Repeat (see her recipe here). I was able to simplify the recipe more by opting to purchase goddess dressing (I used Annie’s Light Goddess Dressing) and organic kale that was already chopped (thank you, Trader Joe’s!).
