In October, I tried a couple of new foods and recipes that I had to share with you guys. Cooking and trying new recipes has become one of my most satisfying pastimes. While I have greatly increased my cooking ability over the past year, one of the things I look for in a recipe is simplicity. Often, my limited availability discourages me from overcomplicated recipes with multiple tools. Though these recipes may be simple, they taste anything but!
Here are the recipes that I tried and love in October:
Maple Cinnamon Roasted Butternut Squash
This recipe from Life Made Sweeter was the perfect side dish. It was my first time trying butternut squash and my overall conclusion was that this recipe reminded me of the yummy sweet potatoes that my family makes—but with a slightly different consistency when roasted. This recipe would be a great addition to any Thanksgiving or Holiday potluck that you are planning to attend. I plan to try another butternut squash recipe very soon. Find the recipe here.
Red Curry Lentils
I’ve tried a couple of recipes from Pinch of Yum and they never disappoint (including the Pumpkin Alfredo recipe I shared here). This recipe was quick and easy after a long cold day. To make the recipe a little easier and quicker to prepare, I opted to use the steamable lentils from Trader Joe’s. I even got my sister to try it (we are not bean/legume people) and she didn’t hate it! I think I’m slowly starting to appreciate beans. Find the recipe on Pinch of Yum.
Sausage and Apple Stuffed Acorn Squash
Why didn’t anyone tell me that squash actually tastes good? I spent so much of my life avoiding squash that I have been missing out on tasty fall dishes. This recipe really solidified my new-found love for squash. Now that I have successfully tried 5 different variations of squash, I can put my irrational dislike aside. This recipe was actually recommended to me in the comments of my 2017 Fall Favorites: Food post (shout out to Allison!) and I am so glad that I tried it.
