Happy Friday! Today is that last day of the #veggieambitions challenge that I am doing in collaboration with Meaghan (@joggerof4). During the 5-day workday veggie challenge, I made it a point to try some new recipes that were primarily plant-based. With this recipes, I hit the motherload! Not only is it super easy, the recipe only requires a few ingredients that I often have on hand.
This finger-friendly food tastes just as good warmed-up for lunch the next day. Warning: it does have a little bit of a kick, so if spicy foods aren’t your thing…this might not be the right recipe for you. My adaptation of the Contentedness Cooking recipe adds a little more heat with the use of Habenero Lime Tortillas from Trader Joe’s! I also decrease the difficulty level of the recipe by using frozen cauliflower rice (which is always in my freezer).
